About Sunset Botánica. Sunset Botánica is the Brooklyn-born, small-batch bitters, fruit vinegars, dry rubs, cocktail component maker, owned and operated by Carlos M. Victoria. Carlos is a 15-year veteran of the New York bar scene, where he has honed his mixology skills at various haunts and locales in Manhattan and Brooklyn.
